Step 1: Saute onion and celery in olive oil. Add oregano (I would start slow and add 1 teaspoon at first, you can add more if you wish) and salt and pepper.
Step 2: Add tomato paste and garlic, dont burn it.
Step 3: Add stock and wine, vinegar, beans and pork. Cook for 30 minutes, taste if you need more oregano, make sure it doesn't cook dry add more water if needed.
Step 4: Add pasta and 1 cup of pasta water, cook until pasta is done stirring so it doesn't burn.
Step 5: Add the cheese and toss.
