Ingredients

The ingredients are:
  • 2 pounds fresh pork roast (cooked until it shreds)
  • 1 pound dry orecchiette pasta (cooked just under al dente this takes about 8 minutes its a hard pasta)
  • 2 tablespoons olive oil
  • 1 yellow onion (chopped)
  • 2 celery ribs (chopped)
  • 3 cloves garlic (mashed)
  • 1 tablespoon oregano
  • 2 tablespoon tomato paste
  • 1 cup white wine
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 cups chicken stock
  • 1 can (15 ounce) cannellini beans (drained)
  • 1 tablespoon red wine vinegar
  • 1 cup water (pasta water)
  • 1/2 cup grated parmesan cheese

How to Make

  • Step 1: Saute onion and celery in olive oil. Add oregano (I would start slow and add 1 teaspoon at first, you can add more if you wish) and salt and pepper.

  • Step 2: Add tomato paste and garlic, dont burn it.

  • Step 3: Add stock and wine, vinegar, beans and pork. Cook for 30 minutes, taste if you need more oregano, make sure it doesn't cook dry add more water if needed.

  • Step 4: Add pasta and 1 cup of pasta water, cook until pasta is done stirring so it doesn't burn.

  • Step 5: Add the cheese and toss.
