Step 1: In a large bowl of an electric mixer cream the butter with the sugar until light and lemon colored. Add the eggs, beating until thick.
Step 2: Sift in the dry ingredients (flour - salt), mixing until blended
Step 3: Stir in the orange peel and fold in the dried fruits which have been dusted with 1 tablespoon of flour.
Step 4: Turn batter into a well-buttered (we use Pam) 5 x 9 inch loaf pan.
Step 5: Bake in a preheated 350 degree F. oven for 50-60 minutes or until a toothpick inserted comes out clean.
