Ingredients

The ingredients are:
  • 1 cup butter, softened
  • 1 cup granulated sugar
  • 4 large eggs (beaten)
  • 2 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 teaspoons grated orange peel
  • 1 cup mixed dried fruits (apricots, pears, apples, whatever is available, chopped)

How to Make

  • Step 1: In a large bowl of an electric mixer cream the butter with the sugar until light and lemon colored. Add the eggs, beating until thick.

  • Step 2: Sift in the dry ingredients (flour - salt), mixing until blended

  • Step 3: Stir in the orange peel and fold in the dried fruits which have been dusted with 1 tablespoon of flour.

  • Step 4: Turn batter into a well-buttered (we use Pam) 5 x 9 inch loaf pan.

  • Step 5: Bake in a preheated 350 degree F. oven for 50-60 minutes or until a toothpick inserted comes out clean.
