  • 3/4 cup water
  • 1 1/3 cup low-fat cottage cheese
  • 2 tablespoon granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon orange extract
  • 1 cup blueberries (fresh or frozen)

How to Make

  • Step 1: If using frozen berries thaw them and drain thoroughly.

  • Step 2: In a small saucepan sprinkle gelatin over berries into water, let soften a few minutes.

  • Step 3: Place over low heat stirring frequently until gelatin is dissolved.

  • Step 4: In blender, combine gelatin mixture, cottage cheese, sugar, vanilla, Orange extract, and 1/2 cup of blueberries. Blend until smooth

  • Step 5: Stir in remaining berries

  • Step 6: Pour into bowl, chill for several hours until firm.
