Ingredients

The ingredients are:
  • 1 pound carrots (halved lengthwise)
  • 1 pound parsnips (4 parsnips, peeled and halved lengthwise)
  • 1 yellow onion (cut into 8 wedges)
  • 1 tablespoon olive oil
  • 2 teaspoons thyme, chopped (or 1/2 teaspoon dried thyme)
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 garlic cloves, minced

How to Make

  • Step 1: Preheat oven to 425 degrees F.

  • Step 2: Spray roasting pan with Pam.

  • Step 3: In the pan combine first 7 ingredients (all the ingredients except for garlic); toss. Roast for 40 minutes until vegetables are browned, tossing occasionally.

  • Step 4: Stir in garlic and roast about 2-5 minutes or until fragrant.
