Ingredients

The ingredients are:
  • 1 2/3 cups pancake mix (buttermilk pancake mix commercial ready-to-use type)
  • 1 cup hazelnuts (toasted, skin removed, diced)
  • 1 1/4 teaspoons ground allspice
  • 3/4 cup pureed pumpkin (canned, not pie-mix)
  • 3/4 cup milk
  • 2 large eggs
  • 1 tablespoon oil (vegetable oil)

How to Make

  • Step 1: Preheat waffle iron.

  • Step 2: Blend pancake mix, hazelnuts and allspice in large bowl, set aside.

  • Step 3: Whisk pumpkin, milk, eggs and oil in small bowl until blended.

  • Step 4: Stir into dry mixture until blended.

  • Step 5: If mixture is too thick, add additional milk, 1 tablespoon at a time.

  • Step 6: Spread 1 1/3 cups batter over preheated waffle iron. Cook as directed in your waffle iron instructions.

  • Step 7: Serve with maple syrup or pear compote (see description) and a dollop of whipped cream, if desired.
