Ingredients

The ingredients are:
  • 1 tablespoon olive oil
  • 1 pound lamb (fat removed, 1" cubes, stew meat)
  • 2 tablespoons all-purpose flour
  • 2 large potatoes (peeled, cut into pieces, 4 servings)
  • 1 medium turnip, peeled, large chop
  • 1 medium onion, quartered
  • 2 medium parsnips, peeled, large chop
  • 3 large carrots, peeled, cut into 3" pieces
  • 1 teaspoon salt
  • 1 teaspoon fresh ground pepper
  • 2 cups chicken stock
  • 1 large leek, sliced (or two small leeks, washed, sliced)
  • 1/4 cup fresh chopped parsley

How to Make

  • Step 1: Heat oil in a heavy skillet, add oil.

  • Step 2: Dust the lamb with the flour.

  • Step 3: Brown in the skillet.

  • Step 4: Add all the ingredients to a medium sized crockpot placing the lamb in the center.

  • Step 5: Turn on to low.

  • Step 6: Turn the veggies over several times during the cooking.

  • Step 7: Cook 5-6 hours.

  • Step 8: Add the parsley 30 minutes before the end of cooking.
