Step 1: Season the chicken with garlic salt and pepper.
Step 2: Add 1 tablespoon olive oil to a large skillet then heat on medium-high. Add chicken, cook until browned and almost cooked through (it will finish cooking in the sauce). Transfer to a plate.
Step 3: Add in onions and bell pepper to the same skillet, add more oil if you need to; cook until vegetables are crisp-tender.
Step 4: Add chicken back to the skillet, then Parmesan cheese and spaghetti sauce; cook 20 minutes over low heat stirring a few times.
Step 5: Stir in cooked pasta and 1 cup mozzarella cheese until melted in the sauce. Add salt and pepper.
Step 6: Sprinkle the remaining 1/2 cup mozzarella cheese over the top. Cover with lid let stand 2 minutes or until cheese is melted.
