Step 1: Preheat oven to 350 degrees F.
Step 2: Shape dough into balls and arrange on cookie sheet; flatten to 1/2 inch thick; press nuts into each cookie. Bake for 12-20 minutes or until golden. Cool completely.
Step 3: Meanwhile mix together the ice cream, mint and extract in a small bowl; place in freezer until ready to use.
Step 4: Line cookie sheet with foil.
Step 5: Place 1/4 cup ice cream on flat side of 1 cookie; top with flat side of second cookie.Place on prepared cookie sheet and freeze. Repeat with all cookie and ice cream to make 8 ice cream sandwiches.
Step 6: Freeze for 10 minutes or until ice cream begins to firm.
Step 7: Melt chocolate chips in microwave safe bowl on low setting in 15 second intervals, stirring often.
Step 8: Dip sandwiches halfway into the chocolate and return to sheet.
Step 9: Freeze for at least 30 minutes or up to one day.
