The ingredients are:
  • 3/4 cup olive oil (extra virgin)
  • 2 teaspoons dried rosemary
  • 2 teaspoons parsley
  • 2 teaspoons dried oregano
  • 1/2 teaspoons crushed red pepper (or to taste, depending on your heat level)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 1/2 tablespoons grated Kefalotiri cheese (or can use Parmesan cheese)
  • 1 small garlic head (cloves separated and peeled)

How to Make

  • Step 1: Blend spices and cheese in a blender until well blended. Add to olive oil.

  • Step 2: Heat oven to 300 degrees. Lay the garlic cloves on a baking sheet lined with parchment paper. Roast garlic for 10 minutes and stir. Roast for another 10 minutes until garlic is golden and crispy, but not burned. Place cloves in a bowl then using a fork, crush all cloves. Add the crushed roasted garlic to the olive oil mixture and stir to combine.

  • Step 3: Serve oil mixture in a shallow bowl.

  • Step 4: Use for dipping crusty bread slices.
