Step 1: Beat together 2 eggs with 1 tsp water till fluffy.
Step 2: In another bowl stir together the panko breacrumbs, sesame seeds, smoked paprika and 1 tsp salt and pepper.
Step 3: Coating one piece at a time, dredge the chicken pieces into the beaten eggs, then coat with the panko breadcrumb mixture. Place chicken pieces on a plate.
Step 4: Heat oil over medium until hot enough for frying.
Step 5: Fry the chicken pieces in batches (if the oil is at the correct temperature, it should bubble and sizzle evenly with no splatters or popping from the seeds).
Step 6: Flip the chicken pieces when they turn dark golden brown (cooking should take 2-3 minutes per side for the chicken to become golden and crisp, TIP: try to only turn them once, rather than repeatedly turning the pieces, this will help to keep the crispy coating intact and keep them from becoming overly greasy).
Step 7: Place fried pieces on a wire rack to drain.
Step 8: Serve with dipping sauce.
