Ingredients

The ingredients are:
  • 2 tablespoons butter
  • 1 small chopped yellow onion
  • 2 1/2 tablespoons all-purpose flour
  • 2 teaspoons garlic powder
  • 1/8 teaspoon cayenne pepper
  • 1 pound red potatoes
  • 1 3/4 cups whole milk
  • 3/4 cup low-sodium chicken broth
  • 1 chicken bouillon cube
  • 1 cup shredded sharp cheddar cheese
  • Salt & pepper
  • Parmesan cheese
  • 1 green onion, chopped

How to Make

  • Step 1: Melt butter in a medium saucepan over medium-high heat. Add onion to pan; sauté 5 minutes or until onion is tender. Sprinkle with flour, garlic powder and cayenne; cook 1 minute, stirring onion mixture constantly. Add potato, whole milk, broth and bouillon cube; bring to a boil. Cover, reduce heat, and simmer 10 minutes.

  • Step 2: Add cheddar cheese ; cook 2 minutes or until cheese melts, stirring frequently.

  • Step 3: Top each serving evenly with Parmesan cheese chopped green onions.
