Ingredients

The ingredients are:
  • 650 grams ground chicken (minced)
  • 1/4 cup curry paste (massaman)
  • 400 grams mixed vegetables (stir fry packet fresh)
  • 2 tablespoons coriander (chopped plus leaves to garnish)
  • 8 cabbage leaves (red small hard core removed and trimmed with scissors to serve)

How to Make

  • Step 1: Heat a wok or large frying pan over high heat and add mince, cook, stirring with a wooden spoon to break up lumps for 5 minutes or until browned.

  • Step 2: Add the massaman curry paste and stir fry for 1-2 minutes till fragrant.

  • Step 3: Add vegetables to pan and stir fry for 2-3 minutes or until tender and remove from heat and stir in coriander.

  • Step 4: Fill cabbage leaves with chicken mixture and garnish with extra coriander leaves and add an extra squeeze a little lime juice over the meat mix.
