  • 1 cup hazelnut flour (Bob's Red Mill finely ground hazelnut flour/meal)
  • 1 cup all-purpose flour
  • 2 tablespoons baking powder
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/4 cup unsalted butter (melted and cooled)
  • 1 cup milk (warm)
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon salt
  • 1 cup chopped apple

How to Make

  • Step 1: Preheat oven to 350°F grease cupcake pan.

  • Step 2: Combine hazelnut meal, flour, baking powder and sugar. Add eggs, butter, milk, vanilla, salt and apples. Let stand 10 minutes.

  • Step 3: Fill greased muffin pan with the batter.

  • Step 4: Bake 8 to 10 minutes, until a toothpick inserted in the center comes out clean.
