  • 1/4 cup packed brown sugar (firmly packed)
  • 2 teaspoons ground cinnamon
  • 1 tablespoon baking powder
  • 1/4 cup egg substitute
  • 1/2 cup apple juice
  • 3/4 cup fat-free milk
  • 2 tablespoons oil (canola oil)
  • 1 medium banana (ripe, mashed)
  • 1 small apple (grated)
  • 1/4 cup chopped dried apricots

How to Make

  • Step 1: Preheat oven 425 degrees F. Generously spray muffin tins with pan-spray

  • Step 2: (these tend to stick to paper cup cake liners).

  • Step 3: Mix first 4 ingredients; set aside.

  • Step 4: Mix egg substitute, juice, milk and oil, add fruit and mix into dry ingredients till just moistened Pour into prepared muffin tins.

  • Step 5: Bake 15-17 minutes.
