Ingredients

The ingredients are:
  • 600 grams fresh whitebait fish
  • 1/2 cup all-purpose flour
  • 2 teaspoons chili powder
  • Vegetable oil (for deep frying)
  • 2 mangoes (green, peeled and finely shredded)
  • 1/2 cup fresh coriander (leaves)
  • 1/3 cup fresh mint (leaves finely shredded)
  • 1 whole chili (red cut into fine shreds)
  • 1 cucumber (lebanese, cut into fine ribbons)
  • 2 tablespoons fish sauce
  • 1 whole lime (juiced)
  • 1 tablespoon palm sugar (or brown sugar)
  • 1 teaspoon garlic

How to Make

  • Step 1: For the whitebait, combine the flour and chilli on a sheet of paper or in a plastic bag and coat the whitebait lightly.

  • Step 2: Heat the oil to hot and deep fry the whitebait in batches until they are golden brown and drain well.

  • Step 3: For the salad, combine the rest of the ingredients and mix together lightly.

  • Step 4: Serve a portion of the whitebait and a portion of the salad.(looks good if you pile the white bait on top of the salad).
