Step 1: Preheat oven to 350F. Line 2 baking sheets with parchment paper.
Step 2: Mix flour, soda and salt together. Set aside.
Step 3: In a large mixing bowl, beat butter and both sugars with an electric mixer on medium speed until creamy.
Step 4: Reduce speed to low and add egg, vanilla and rum extract, scraping sides of bowl often. Beat on medium for 1 minute,
Step 5: By hand, add the flour mixture and stir until mixed in. Mix in remaining ingredients. Dough will be thick.
Step 6: Shape the dough into 1-inch balls and place on baking sheets 2 1/2 inches apart. Press down tops slightly.
Step 7: Bake one sheet at a time for 10-13 minutes or until lightly browned around the edges. Let cool on sheets for 5 minutes and then transfer to a wire rack to cool completely.
