Ingredients

The ingredients are:
  • 1 1/4 pounds raw chicken pieces
  • 1 tablespoon dried parsley
  • 1 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • 1/4 cup dry white wine
  • 1/4 cup olive oil
  • 1 whole lemon, juiced
  • 2 garlic cloves, crushed
  • 1 tablespoon minced black olives
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon fresh ground pepper

How to Make

  • Step 1: Combine marinade ingredients in a large zip-lock bag.

  • Step 2: Add chicken, seal bag and squish to evenly coat.

  • Step 3: Refrigerate for at least 8 hours.

  • Step 4: Remove chicken from zip-lock bag and discard marinade.

  • Step 5: Grill, covered, until done, turning occasionally. Grill temperature and time varies as follows.

  • Step 6: Bone-in breasts (10-12 ounces), legs and thighs: 30-40 minutes over indirect medium heat.

  • Step 7: Chicken wings, 2-3 ounces: 18-20 minutes over direct medium heat.

  • Step 8: Boneless, skinless breasts. 6-8 ounces: 8-12 minutes over direct medium heat.

  • Step 9: Boneless, skinless thighs, 4 ounces: 8-12 minutes over direct high heat.
