Ingredients

The ingredients are:
  • 1 cup long grain rice, cooked, kept warm
  • 1 teaspoon vegetable oil
  • 1 1/2 cups onions, chopped
  • 4 large garlic cloves, chopped
  • 1 pound ground chicken
  • 1 (10 ounce) can low sodium chicken broth
  • 1 cup water
  • 3.88 ounces glico hot curry cakes
  • 2 bananas, sliced
  • 1 cup mango chutney
  • 3/4 cup tomatoes, chopped
  • 1/2 cup sweet onion, chopped
  • 1/4 cup coconut, coarse, unsweetened
  • 8 chapati or whole wheat tortillas

How to Make

  • Step 1: In a large fry pan add the tablespoon of oil, saute your onion and garlic for 3 minutes

  • Step 2: Add ground chicken and stir breaking up any lumps, fry until chicken is lightly browned about 10 minutes

  • Step 3: Pour in the broth and water, bring to a simmer

  • Step 4: Add 3 Glico curry cubes, melt and taste. Add more if you like it spicy hot

  • Step 5: Stir and simmer until the curry has thickened approximately 10 minutes

  • Step 6: While it is simmering cook your rice. Use whatever method you like.

  • Step 7: Wrap your chpatis in foil and warm 350f oven 5 minute

  • Step 8: Have your condiments prepared and in small separate bowls on the table. You may mix the tomatoes and onions together.

  • Step 9: To serve add a serving of rice in each of four bowls top with a generous amount of curried chicken. Let each person add their own condiments. Enjoy!
