Step 1: Slice very top off of each tomato and remove pulp using a grapefruit spoon or knife, or a melon baller.
Step 2: Invert tomatoes on paper towels and allow to drain.
Step 3: Combine remaining ingredients and spoon into tomatoes. Refrigerate until ready to serve.
