Ingredients

The ingredients are:
  • 1/4 cup olive oil (extra virgin)
  • 1 lemon, whole (grated rind and juice of)
  • 1 tablespoon capers (small baby capers)
  • 1 tablespoon parsley (finely chopped)
  • Freshly ground salt (to taste)
  • Fresh ground black pepper (to taste)
  • 1/4 cup olive oil
  • 1 1/2 to 2 pounds salmon fillets (fresh fillets)
  • 250 grams green beans (steamed)
  • Extra virgin olive oil (extra for dressing)
  • FOR GARLIC MASH
  • 800 grams potatoes (peeled)
  • 4 garlic cloves (peeled)
  • 1/3 cup olive oil (extra virgin)
  • Fresh ground salt (to taste)
  • Fresh ground black pepper (to taste)

How to Make

  • Step 1: For Salmon - combine extra virgin olive oil together with lemon rind, juice, capers and season to taste.

  • Step 2: Season salmon fillets and panfry in hot pure olive oil for 2 minutes on each side until golden on the outside but still slightly pink in the centre.

  • Step 3: Dress beans with extra virgin olive oil and season to taste.

  • Step 4: Garlic Mash - Cut potatoes into chunks and bring to the boil in a large saucepan of salted water.

  • Step 5: Add garlic cloves and boil for 20 to 30 minutes or until very tender.

  • Step 6: Drain and mash potatoes and garlic together until smooth.

  • Step 7: Slowly mix in extra virgin olive oil and season to taste.

  • Step 8: Serve Panfried Salmon on Garlic Mash drizzled with Caper and Lemon Oil and accompanied with beans.
