Ingredients

The ingredients are:
  • 1 pound lean ground beef (extra-lean)
  • 1 yellow onion, diced
  • 1 garlic clove, minced
  • 1/2 teaspoon kosher salt
  • 1 can (8 ounce) tomato sauce
  • 1 can (14 1/2 ounce) diced tomatoes (with liquid)
  • 1 can (14 1/2 ounce) kidney beans (with liquid)
  • 1 can (14 1/2 ounce) corn kernels (with liquid)
  • 1 can (6 ounce) sliced olives, drained (mom didn't use)
  • 1 tablespoons mild chili powder
  • 1 teaspoons cumin
  • 1 beef bouillon cube
  • 2 teaspoons dried cilantro
  • OPTIONAL GARNISHES
  • 1 avocado (sliced)
  • 8 ounces sour cream

How to Make

  • Step 1: Brown beef, onion and garlic in large saucepan with salt, drain off grease.

  • Step 2: Add remaining ingredients. If not enough liquid, add some more water and another bouillon cube. Bring to a boil, then simmer for 20-30 minutes.

  • Step 3: Serve with sliced avocados or sour cream.
