Ingredients

The ingredients are:
  • 1/4 cup yogurt (Greek, plain)
  • 1 tablespoon fresh mint, chopped
  • 4 pita bread (with pockets)
  • 1/2 cup crumbled feta cheese
  • 1 tablespoons kalamata olives (sliced)
  • 1 large egg
  • 1 tablespoon water
  • 1/4 cup panko
  • 1/2 cup sweet onion, finely chopped
  • 2 garlic cloves, minced
  • 2 tablespoons wine vinegar
  • 2 teaspoons Dijon mustard
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon pepper
  • 1 pound lamb (lean ground)
  • 3/4 cup tomato, chopped (optional)
  • 3/4 cup chopped cucumber (optional)

How to Make

  • Step 1: Combine the yogurt and mint, set aside

  • Step 2: In a bowl beat the egg and water together

  • Step 3: Stir in bread crumbs, onion, garlic, vinegar, mustard, salt, pepper,and oregano

  • Step 4: Combine this mixture with the ground lamb

  • Step 5: Make four 1/2 inch patties

  • Step 6: Over medium high heat in a non stick skillet cook the patties approx 6 minutes each side or until cooked to your likeing

  • Step 7: Cut the top 1/3 off each pita, invert and place it in the bottom of the pita

  • Step 8: If using cuke & tomato divide between the 4 pitas

  • Step 9: Paint the burgers with the mint yogurt

  • Step 10: Place a burger in each pita,

  • Step 11: Sprinkle with the feta cheese and olives
