Ingredients

The ingredients are:
  • 8 cups fresh baby spinach, stems removed
  • 1 cup fresh mushrooms, sliced
  • 1 bunch scallions, sliced
  • 3 large (hard boiled, chopped)
  • 1/2 cup shredded parmesan cheese (I use parm-reg sometimes too)
  • 8 slices (8 ounces) bacon (cooked and crumbled)
  • 1/2 cup honey
  • 1/2 cup cider vinegar
  • 1/3 cup olive oil
  • 1 teaspoon mustard (spicy brown)
  • 1 teaspoon lemon juice (I really like fresh, but for a tsp?.... bottled is okay)

How to Make

  • Step 1: Combine the first 5 ingredients with 6 of the bacon strips in a large bowl.

  • Step 2: Whisk together the honey, vinegar, mustard, oil, lemon juice, and remaining bacon. Pour over the salad and serve immediately.
