Ingredients

The ingredients are:
  • 3 slices (3 ounces) bacon
  • 2 slices (2 ounces) bread
  • 1 1/2 tablespoons mayonnaise
  • 2 teaspoons minced fresh chives, or half that amount dried
  • 2 teaspoons chopped fresh dill, or half that amount dried
  • Fresh ground pepper, to taste
  • 5 ounces avocado, mashed (ripe)

How to Make

  • Step 1: Cook bacon in heavy skillet over moderate heat, turning occasionally til crisp, drain on paper towels.

  • Step 2: Toast bread. Stir together mayo, herbs and seasonings, spread on toast.

  • Step 3: Halve avocado and scoop out insides. Put half of avocado on each sandwich and gently cut/squish with a fork. Otherwise the avocado will squeeze out the sandwich.

  • Step 4: Add bacon and top with other piece of toast, serve immediately.
