Ingredients

The ingredients are:
  • 1 1/2 cups granulated sugar
  • 2 large eggs (beaten)
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 can (15 ounce) crushed pineapple
  • GLAZE
  • 1/2 cup butter, melted (1/4 lb)
  • 1 cup granulated sugar
  • 3/4 cup evaporated milk (NOT condensed)
  • 1 teaspoon vanilla extract
  • 1 cup sweetened flaked coconut
  • 1 cup chopped pecans (or walnuts)

How to Make

  • Step 1: Beat 1 1/2 cup sugar into eggs.

  • Step 2: Add flour, baking soda & salt and blend thoroughly.

  • Step 3: Stir in pineapple.

  • Step 4: Pour into greased 13 x 9-inch metal baking pan.

  • Step 5: Bake at 350°F about 30-35 minutes until an inserted toothpick comes out clean.

  • Step 6: Meanwhile, combine butter, 1 cup sugar & milk in a small saucepan; bring to a boil, lower heat and simmer about 10 min until sugar is dissolved and sauce is thickened.

  • Step 7: Remove from heat and stir in vanilla, coconut & nuts.

  • Step 8: As soon as cake comes out of oven, spread coconut mixture over the top.

  • Step 9: Let cool completely before slicing and serving.
