Step 1: Start your biscuits first. Then, in skillet over medium heat, cook sausage until done, breaking up with a potato masher.
Step 2: Drain grease, then add butter, using a spatula to loosen all the good bits from the pan.
Step 3: Sprinkle flour over sausage and stir well, let cook for about 5 minutes or more, til flour has turned golden brown.
Step 4: Add milk and cook until thickened, stirring frequently. Add pepper, taste and adjust seasonings. Serve over biscuits.
