Step 1: Preheat skillet or griddle to medium heat and spray with nonstick spray.
Step 2: Spread jam on one piece of bread. On other piece, place turkey, onion, roasted red peppers and swiss cheese. Place jam side over turkey side and put on griddle.
Step 3: Cover with a deep pot lid and cook a minute or so, until lightly browned. Remove lid, flip sandwich carefully and cook other side about a minute or so, until lightly browned.
Step 4: If sandwich browns before cheese melts, put in the microwave for 15 seconds or so.
