Ingredients

The ingredients are:
  • 2 bread slices (sourdough bread)
  • 1 to 2 tablespoons apricot jam
  • 4 ounces cooked turkey breast (sliced)
  • 1 slice sweet onion
  • 1/2 tablespoon chopped roasted red pepper (from a jar)
  • 1 to 2 Swiss cheese slices
  • Nonstick cooking spray, olive oil or butter flavored

How to Make

  • Step 1: Preheat skillet or griddle to medium heat and spray with nonstick spray.

  • Step 2: Spread jam on one piece of bread. On other piece, place turkey, onion, roasted red peppers and swiss cheese. Place jam side over turkey side and put on griddle.

  • Step 3: Cover with a deep pot lid and cook a minute or so, until lightly browned. Remove lid, flip sandwich carefully and cook other side about a minute or so, until lightly browned.

  • Step 4: If sandwich browns before cheese melts, put in the microwave for 15 seconds or so.
