  • 4 (130 gram) mushrooms (flat well opened)
  • 200 grams cooked ham (finely sliced or salami, hot if you like bite)
  • 1/4 cup oil (olive oil)
  • 3/4 cup cheddar cheese, grated (tasty coarsely grated)
  • 4 large eggs

How to Make

  • Step 1: Preheat oven to 200C (180C fan forced).

  • Step 2: Arrange mushrooms and ham in a 27cm x 17cm (base measurement) ovenproof dish.

  • Step 3: Drizzle the mushrooms with oil.

  • Step 4: Bake for 10 minutes.

  • Step 5: Sprinkle mushrooms with cheese and bake for 5 minutes more.

  • Step 6: Carefully crack eggs onto the ham and bake for 5 minutes more or until cheese is melted and eggs cooked to your liking.

  • Step 7: Season with salt and pepper and serve at once.
