Ingredients

The ingredients are:
  • 1 cup dry rice
  • 2 cups water
  • 18 ounces boneless skinless chicken breasts
  • 1 teaspoon chili seasoning mix (use the rest for corn on the cob or other veggies)
  • 1/8 teaspoon cumin
  • 1 pinch cardamon
  • 1 pinch turmeric
  • 1 pinch cinnamon
  • 1 pinch nutmeg
  • 1 pinch ground cloves
  • 3 tablespoons butter
  • 1 onion, diced
  • 1/4 teaspoon crushed garlic
  • 3/4 cup unsweetened coconut milk (well shaken)

How to Make

  • Step 1: Start rice per package directions. Chop chicken into bite-sized chunks and put into a bowl. Add spices and stir well.

  • Step 2: Preheat butter in large, heavy skillet over medium-high heat, saute onion and garlic until translucent, add chicken and cook, stirring frequently, about 8 minutes or til no longer pink.

  • Step 3: Add coconut milk and bring to a good simmer, reduce heat to low and cook 5 more minutes. Taste and adjust seasonings. Serve over rice.
