Step 1: Start rice per package directions. Chop chicken into bite-sized chunks and put into a bowl. Add spices and stir well.
Step 2: Preheat butter in large, heavy skillet over medium-high heat, saute onion and garlic until translucent, add chicken and cook, stirring frequently, about 8 minutes or til no longer pink.
Step 3: Add coconut milk and bring to a good simmer, reduce heat to low and cook 5 more minutes. Taste and adjust seasonings. Serve over rice.
