Ingredients

The ingredients are:
  • 8 ounces cooked chicken breast
  • 4 tablespoons chopped pecans
  • 1/4 cup diced celery
  • 1/4 cup diced sweet onion
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon fresh lemon juice
  • 1/8 teaspoon kosher salt
  • 1 to 2 teaspoons chopped jalapenos (optional - canned)
  • 3 tablespoons mayonnaise (just enough to bind salad)
  • 4 bread slices (or 2 croissants)
  • 2 tablespoons Dijon mustard (or mayonnaise, for bread)
  • 1 avocado (ripened)
  • 2 provolone cheese slices (optional)
  • 2 lettuce leaves (green leaf lettuce)
  • Fresh ground pepper

How to Make

  • Step 1: Chop chicken into 1/4 inch cubes and place in medium bowl. Add pecans, celery, onion, mustard, lemon juice, salt, and jalapenos if using.

  • Step 2: Add just enough mayonnaise to bind salad, stir to combine and adjust seasoning as desired.

  • Step 3: Toast bread and spread mayonnaise or Dijon on each slice right out of the toaster.

  • Step 4: Spread the chicken salad on half the slices, top with provolone and lettuce. Mash avocado on other top slices and top with fresh ground pepper. Put sandwich together and enjoy!
