  • 1 cup spinach (fresh baby spinach)
  • 1/4 cup chopped green onion
  • 1/4 cup fresh parsley leaves
  • 8 large eggs
  • 1 teaspoon pepper
  • 4 tablespoons butter
  • 4 slices (4 ounces) cooked ham
  • 4 slices (4 ounces) cheese

How to Make

  • Step 1: In a food processor, chop the spinach green onions and parsley. When finely minced, add eggs and mix until combined, add pepper in.

  • Step 2: Add 1 Tablespoon butter at time into buttered skillet, add 1/4 of mixture. Cook then flip, add ham and cheese, with the ham showing out the edge not cheese. Repeat.
