Ingredients

The ingredients are:
  • BOIL
  • 8 ounces dry egg noodles
  • 2 teaspoons kosher salt, for boiling
  • NOODLES
  • 1 cup sour cream
  • 4 ounces cream cheese
  • 8 green onions, sliced
  • MEAT SAUCE
  • 1 pound extra lean ground beef
  • 1/2 yellow onion, diced
  • 2 garlic cloves, crushed
  • 1 teaspoon kosher salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon Italian seasoning
  • 1 can (16 ounce) diced tomatoes
  • 1 can (8 ounce) tomato sauce
  • 1 can (7 ounce) chopped green chilies
  • 1/8 teaspoon allspice, or more to taste
  • TOPPING
  • 1/2 cup grated cheddar cheese

How to Make

  • Step 1: Add salt to water for noodles, bring to a boil and add noodles, cooking 7-8 minutes. Grease a 4 quart deep casserole dish.

  • Step 2: Combine sour cream, cream cheese and green onions. When noodles are done cooking, drain and immediately stir in sour cream mixture. Taste and adjust seasoning, then pour into casserole dish.

  • Step 3: Brown ground beef and onion. Add remaining sauce ingredients to meat and cook ten minutes. Taste and adjust seasoning. Pour into prepared baking dish.

  • Step 4: Bake uncovered for 35 minutes, sprinkle cheese on top and bake until cheese is melted. If made the day before, remove from fridge a few hours before baking and add 10-15 minutes to cooking time.
