Step 1: Toast chopped or nuts, constantly stirring, in a small dry skillet over medium-low heat until fragrant and lightly browned, 2 to 4 minutes. Set aside.
Step 2: Bring green beans and water to a boil in a large skillet. Reduce heat to a simmer, cover and cook until the beans are just tender, 3 minutes.
Step 3: Uncover and continue cooking, stirring occasionally, until the water evaporates, 3 to 4 minutes more.
Step 4: Add oil or butter, salt and pepper to the pan and cook, stirring, 1 minute more.
Step 5: Transfer the beans to a large bowl or serving platter, and toss with blue cheese until well coated.
Step 6: Sprinkle with walnuts.
Step 7: Even good at room temperature!
