Ingredients

The ingredients are:
  • 8 ounces cream cheese, softened (I use the microwave for 45 seconds)
  • 1/3 cup sugar
  • 1 teaspoon vanilla
  • 2 tablespoons pineapple juice, reserved from can
  • 2 (16 ounce) tubes refrigeratored sugar cookie dough, (I use a large cookie sheet for 2 tubes)
  • 1 ( 11 ounce) can mandarin oranges, well drained, cut into bite size pieces
  • 1 (17 ounce) can pineapple, drained well, and reserve juice, cut into bite size pieces
  • Fresh strawberries, hulled, and thickly sliced, and cut into quarthers
  • Fresh kiwi, peeled, and thickly sliced, and cut into quarters

How to Make

  • Step 1: Lightly spray cookie sheet with cooking oil. Preheat oven following temperature given on cookie tube.

  • Step 2: Open tube of cookie dough, and press cookie dough onto cookie sheet, spreading evenly into pan. (I use the palm of my hand) Bake following time directions on cookie tube, or until golden brown on top. Remove from oven, and cool.

  • Step 3: Microwave cream cheese for 45 seconds on high. Using a mixer beat cream cheese until smooth.

  • Step 4: Add sugar to cream cheese mixture, and mix well.

  • Step 5: Add vanilla and pineapple juice, and mix well.

  • Step 6: Spread cream cheese frosting onto cookie crust, and cover dough using a knife.

  • Step 7: Cover cheese frosting with sliced fruit pieces.

  • Step 8: Chill for several hours in the refrigerator before serving.

  • Step 9: Cut into squares and serve.
