Step 1: Add onion to chicken stock; cook, stirring, until onion starts to brown. Add fresh garlic, dill, and parsley; if you use dried you will need less.
Step 2: Stir in dry mustard. Add tomatoes, thyme, and capers. Simmer 30 minutes. Add uncooked shrimp to a 1-1/2 quart casserole. Cover with sauce.
Step 3: Top with feta and mozzarella cheeses. Sprinkle with olives.
Step 4: Bake at 400 degrees Fahrenheit for 10 minutes or until bubbly and cheese is melted
