Ingredients

The ingredients are:
  • 1 package (8 ounce) dry rice (yellow rice mix)
  • 1 can (15 ounce) black beans (rinsed and drained)
  • 1 1/2 cups frozen corn, thawed (or 1 can 15 oz, drained)
  • 3 to 4 scallions, diced (white and green parts)
  • 2 teaspoons fresh lime juice
  • 1 teaspoon ground cumin
  • Optional
  • 1 can (4 ounce) green chilies
  • Other ingredients or a garnish:
  • Jalapenos, minced
  • Pimentos, chopped
  • Black olives, chopped

How to Make

  • Step 1: Rice ... Simply cook the rice according to the package directions. Every package can vary a bit; so, just follow the package directions. Remove from the heat; and, cover to keep warm.

  • Step 2: Beans and Corn ... In a small pot or microwave dish; add the beans, thawed corn, cumin, and a pinch of both salt and pepper. You can can add the green chilies at this time, if you want. You can also add any of the 'other ingredients' as well. Simmer on medium to medium low heat until warm; or, you can even microwave on medium for 4-5 minutes until warm. I prefer the microwave - it is quicker and frees up the stove.

  • Step 3: Finish ... Add the warm beans and corn to the cooked rice; then, add the scallions and lime juice - mix to combine. Re-season with salt and pepper if necessary. Perfect to serve with any Mexican type of dish.

  • Step 4: Serve and ENJOY! ... A perfect easy side dish. The jalapenos, pimentos, or black olives, can be added to the rice; or, I like to use these as a garnish.
