Ingredients

The ingredients are:
  • 8 large eggs
  • 2 tablespoons butter
  • RED SAUCE
  • 6 Roma tomatoes (cut in wedges)
  • 1 jalapeno pepper chopped seeded
  • 1/2 cup chopped yellow onion
  • 1 garlic clove
  • 1 1/2 cups water
  • GREEN SAUCE
  • 1/2 cup yellow onion, chopped
  • 1 garlic clove
  • 20 tomatillos, husk removed
  • 3 serrano chilies, seeds removed
  • 1 1/2 cups water

How to Make

  • Step 1: In two separate sauce pans cook red and green sauce for 20 minutes; cool; and run through blender.

  • Step 2: Fry eggs in butter, 2 per person; put on plate.

  • Step 3: Spoon 1/4 cup green sauce around one egg on side and 1/4 cup red sauce around other egg. The eggs are in middle and the sauce only goes on one side of plate and meets in middle.
