  • 1 tablespoon butter
  • 2 whole fresh mushrooms, chopped
  • 1 tablespoon black olives, chopped
  • 1 pinch oregano
  • 1/4 teaspoon pepper
  • 1/2 cup baby spinach, chopped
  • 2 tablespoons feta cheese
  • Garnish
  • Tomato, chopped
  • 1 green onion, chopped

How to Make

  • Step 1: Mix eggs with oregano and pepper.

  • Step 2: In pan, saute mushrooms in butter. Take out mushrooms. Pour eggs in butter. Add back mushrooms to pan.

  • Step 3: Add olives spinach and cheese; cook until done. Fold over plate.

  • Step 4: Garnish with tomatoes and green onion.
