Ingredients

The ingredients are:
  • 8 large eggs (at room temperature)
  • 1/2 cup half and half (thin cream125ml, )
  • Salt (to taste)
  • Cracked black pepper (to taste)
  • 40 grams butter
  • 2 tablespoons herbs (parsley, chives and dill leaves)
  • 4 split (420 grams) bagels
  • 100 grams smoked salmon (flaked into pieces)

How to Make

  • Step 1: Whisk eggs, cream and salt and pepper in a bowl.

  • Step 2: Melt butter in a non-stick frying pan over medium high heat until foaming.

  • Step 3: Add egg mixture, sprinkle with herbs and cook for 3 minutes.

  • Step 4: Gently draw in edges with a fork to allow uncooked egg to run underneath and cook until eggs are just set.

  • Step 5: Remove from pan and keep warm.

  • Step 6: Meanwhile, place bagels in a toaster or oven grill (broil) and toast until golden brown.

  • Step 7: Spoon eggs onto bagels and top with flaked salmon.
