Ingredients

The ingredients are:
  • 2/3-1 cup brown sugar ( use the lesser amount if you are adding choc. chips)
  • 1/3 cup oil
  • 1/3 cup unsweetened applesauce
  • 2 eggs, beaten or 1/2 cup Egg Beaters egg substitute
  • 1 teaspoon vanilla
  • 1/2 cup rice milk or 1/2 cup milk
  • 1/2 cup water
  • 3 cups rolled oats
  • 1/4 cup oat bran
  • 1/4 cup ground flax seeds
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2-1 teaspoon cinnamon
  • 1/2 cup chocolate chips (optional) or 1/2 cup dried fruit (optional)

How to Make

  • Step 1: Preheat oven to 350°. In a medium bowl, mix the sugar, oil, applesauce, eggs, vanilla, milk and water.

  • Step 2: In a separate bowl, mix the oats, oat bran, flax, baking powder, salt and cinnamon.

  • Step 3: Add the dry to the wet, mix thoroughly, then fold in the chocolate chips or fruit, if using.

  • Step 4: Pour into a greased 9x13 pan and bake for 35-40 minutes, until golden on the edges. If you don't bake until totally cake-like, you can take it out, fluff it with a fork and serve it with milk. Otherwise, cut and eat with butter like coffee cake.
