Ingredients

The ingredients are:
  • FOR SALAD DRESSING
  • 1/8 cup olive oil
  • 1 teaspoon lemon juice
  • 1/2 teaspoon Italian seasoning
  • Kosher salt, 1 pinch
  • Fresh ground pepper
  • 1/4 teaspoon crushed garlic
  • 2 tablespoons Parmesan cheese, grated
  • Sweet onion (1/8 onion, sliced thinly
  • FOR PASTA
  • 6 ounces dry jumbo pasta shells
  • 1 tablespoon salt (for boiling)
  • FOR SALAD
  • 1/2 large green leaf lettuce head
  • 1/2 cup tomato, chopped (fresh)
  • 2 ounces pepperoni (thinly sliced, quartered)
  • 4 ounces sliced olives (drained)
  • 1/4 pound queso ranchero (or feta)
  • Garlic salt, to taste

How to Make

  • Step 1: Assemble dressing first, it will be clumpy but that's okay.

  • Step 2: Place pasta and salt in pan and cook per package. Drain immediately and set upside down on cookie rack to cool.

  • Step 3: Chop lettuce and chop tomatoes and pepperoni and place in large bowl and add olives and cheese.

  • Step 4: Using a slotted spoon, add onions to salad and toss. This may be enough dressing for the salad. Keep remaining salad dressing in a jar in fridge.

  • Step 5: Add garlic salt to taste, then fill the pasta shells. Keep refrigerated until serving.
