Step 1: Chop vegetables and set aside.
Step 2: In bowl large enough to hold slaw, combine remaining ingredients and whisk until smooth.
Step 3: Add vegetables and mix well.
Step 4: Cover and refrigerate overnight.
Step 5: Keep extra dressing in a glass jar or bottle in the fridge. When you're ready to use it again, microwave it just long enough to thin the honey.
