Step 1: Preheat oven to 425 degrees.
Step 2: Place parchment paper on a rimmed cookie sheet.
Step 3: Wash potatoes and rub with kosher salt (unless using oil).
Step 4: If using oil, dry potatoes and rub with olive oil, then rub with salt.
Step 5: Place potatoes on parchment paper and bake for about an hour, depending on size. (Check smaller potatoes at 50 minutes and large potatoes will need over an hour.)
Step 6: Remove from oven and brush salt off with a pastry brush. Serve warm.
