Ingredients

The ingredients are:
  • 1/3 cup oil (olive oil)
  • 3 tablespoons brown sugar
  • 1/2 teaspoon curry powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground thyme
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon cayenne pepper
  • 1/2 cup chopped pecans
  • 1 medium butternut squash (peeled, seeded and cut into 1" cubes)
  • 1 large apple (firm apple, cored and cubed no need to peel it)

How to Make

  • Step 1: Preheat oven to 375° F.

  • Step 2: In a small bowl, mix all ingredients except squash and apples.

  • Step 3: In a large bowl, place squash and apples, and pour oil mixture over them. Stir well to coat.

  • Step 4: Place on a baking sheet that has been sprayed with non-stick cooking spray and spread out to make one layer. Bake in preheated 375° F. oven for 50 minutes or until squash is tender.
