Ingredients

The ingredients are:
  • 4 cups mixed greens (I like to use 'soft baby' greens - bibb, boston, red leaf, frisee)
  • 8 to 12 fresh figs, cut in half (I use black mission figs)
  • 1 cup honeydew diced (or cantaloupe, small diced)
  • 8 to 12 slices Prosciutto ham (sliced very thin)
  • DRESSING
  • 2 to 3 tablespoons balsamic vinegar (I like to use a good aged vinegar)
  • 1 to 1 1/2 tablespoons oil (grape seed or a neutral oil)
  • Kosher salt, to taste
  • Pepper, to taste

How to Make

  • Step 1: Salad ... Add the mixed greens (seasoned with a bit of salt and pepper) to a salad plate or bowl; top with the figs, melon, and prosciutto. Simply drizzle the balsamic vinegar, and oil over the top. Finish with salt and pepper.

  • Step 2: Serve ... It's such a simple salad; yet, so good. Takes 5 minutes to prepare; and absolutely delicious and elegant. ENJOY!

  • Step 3: You could always add blue cheese, gorgonzola, goat cheese; or even toasted nuts too. But, I prefer to just enjoy it as is. Delicious and very fresh!
