  • 1 teaspoons oil (vegetable oil)
  • 2 cups sliced mushrooms
  • 1 garlic clove, minced
  • 1/2 teaspoon curry powder
  • 1/4 teaspoon cumin seed (optional)
  • 1 cup low-sodium chicken broth (fat-free)
  • 1 cup fresh sliced green string beans (or frozen cut green beans)
  • 1/2 cup dry long-grain white rice
  • 4 slices bacon slices (Canadian bacon, cut into short thin strips, optional)
  • 1/4 teaspoon black pepper
  • Salt, to taste

How to Make

  • Step 1: Heat oil in medium saucepan. Add mushrooms and garlic; cook and stir over medium-low heat about 5 minutes.

  • Step 2: Add curry powder and cumin seed, if desired; cook and stir 30 seconds.

  • Step 3: Add chicken broth; bring to a boil. Stir in green beans and rice. Reduce heat to low. Cover and simmer about 18 minutes or until rice is tender and liquid is absorbed.

  • Step 4: Stir in Canadian bacon and pepper, and salt if needed. Heat just until bacon is hot.
