Ingredients

The ingredients are:
  • 16 ounces frozen cauliflower
  • 2 large eggs (beaten)
  • 1/2 cup parmesan cheese, grated
  • 8 ounces mozzarella cheese, shredded
  • 15 ounces ricotta cheese
  • 4 tablespoons dry breadcrumbs (divided,can use gluten free)
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/2 cup dry breadcrumbs (can use gluten free)
  • 2 tablespoons Parmesan cheese, grated

How to Make

  • Step 1: Cook cauliflower until tender.

  • Step 2: With a fork crush cauliflower into smaller pieces but don't puree.

  • Step 3: In a large bowl combine cauliflower, eggs, 1/2 cup Parmesan cheese, mozzarella, ricotta cheese, 2 tablespoons bread crumbs, salt and pepper.

  • Step 4: Preheat oven to 350 degrees Fahrenheit.

  • Step 5: Grease a 12x8 pan; sprinkle with 1/2 cup bread crumbs.

  • Step 6: Pour mixture into prepared baking pan.

  • Step 7: Sprinkle with remaining Parmesan cheese, and remaining 2 tablespoons bread crumbs.

  • Step 8: Cover with foil and bake for 30 minutes.

  • Step 9: Remove foil and bake 30 minutes more until browned.
