Step 1: In a large kettle, combine the apples, water and butter
Step 2: Cook and stir over low heat until apples are soft
Step 3: Stir in pectin and bring to a rolling boil and stir constantly
Step 4: Add the sugars, cinnamon and nutmet and return to a rolling boil for 1 minute while continuing to stir constantly
Step 5: Remove from the heat and skim off any foam
Step 6: Ladle hot jam into hot sterilized jars, leaving 1/4 inch headspace. Adjust caps and process for 10 minutes in a boiling hot water bath
