Ingredients

The ingredients are:
  • 1 medium yellow onion, finely chopped
  • 1 tablespoon margarine
  • 1 pounds carrots, peeled and sliced
  • 1 can (10 3/4 ounce) condensed cream of celery soup (or 1 can cream of mushroom soup)
  • Stove Top stuffing mix (one package)
  • 2 cups shredded cheddar cheese, divided

How to Make

  • Step 1: Cook carrots in small amount of water until tender crisp (5- 7 minutes).

  • Step 2: Meanwhile, saute onion in margarine until tender.

  • Step 3: Combine cooked carrots and sauteed onion with cream of celery soup.

  • Step 4: Prepare 1 box of Stove Top stuffing.

  • Step 5: In 2 quart casserole dish make layers as follows: 1/2 of stuffing, 1/2 of carrot mixture, 1 c. cheddar cheese.

  • Step 6: Repeat layers.

  • Step 7: Bake uncovered at 350 F for 20 to 25 minutes.
