Ingredients

The ingredients are:
  • WAFFLES
  • 2 cups self rising flour
  • 2 cup buttermilk
  • 4 large eggs (separated)
  • 1/2 cup butter, melted
  • 1.5 ounces dry vanilla pudding powder
  • APRICOT TOPPING
  • 1 cup diced apricots (pitted)
  • 1 tablespoon lemon juice
  • 4 tablespoons apricot jam
  • 1 cup whipped cream

How to Make

  • Step 1: Beat egg whites.

  • Step 2: In another mixing bowl, combine pudding mix, flour, salt and baking powder; add buttermilk and egg yolks. you may need little more milk Fold in whites.

  • Step 3: Bake on hot waffle iron sprayed heavily with Pam. use only 1/2 cup batter rises great and overflows

  • Step 4: Heat the jam apricots and lemon juice in microwave until just warm. Dump in middle of whipped cream in bowl, stirring just a little.

  • Step 5: Top waffles from bowl.
